Saray Ottoman revives palace recipes from the Topkapi kitchens: jewelled dishes served amid tulips and marble in a restored pavilion at Gülhane.

In the Matbah-ı Âmire, the imperial kitchen, hundreds of cooks once stirred the kazans for the court. We cook from the surviving registers - saffron, rosewater, quince - one sini at a time.

    The Matbah-ı Âmire rises at Topkapi: ten domed kitchens facing the Marmara.

    Under Süleyman, the kazans feed five thousand on divan days.

  3. 1718

    The Lâle Devri: tulips in the courtyards, sherbet in silver.

    A restored pavilion at Gülhane serves the registers again.

The craft

The tulip reached the palace before it reached Europe: folded into silk, fired onto tiles, drawn around every dish.

Our tables keep the same rule - one flower, four petals, endless return. Look for it on the rim of every plate.
