Maison Lam lives in a yellow colonial villa on Phan Dinh Phung, where the ovens have warmed the tiles since morning coffee was still poured through a phin at the door.

We laminate like Paris and flavour like Hanoi: pandan folded into butter, robusta into ganache, coconut toasted until the whole arcade smells of it.
