Kobe Kissaki is theatre of the grill: A5 wagyu and teppanyaki performed on a mirror-polished iron plate in a dark, bordeaux-lit Dubai room.

Twelve counter seats face the plate. Every dinner is staged in three acts - the blade, the flame, the rest.

  1. The blade

    The cut is presented and the kissaki drawn - a knife point of Sakai steel.

  2. The flame

    Fat meets polished iron at 200 degrees. The sear takes ninety seconds and total silence.

  3. The rest

    The beef rests off the heat and melts the moment it is served.
