The ritual

The phin takes its time

Four minutes from grounds to glass. Scroll, and let it drip.

  1. Pack the phin

    Coarse-ground robusta, pressed lightly under the gravity plate. No pumps, no paper.

  2. The slow drip

    Hot water sits on the grounds and falls drop by drop onto a finger of condensed milk.

  3. Stir & swirl

    Coffee and sweet milk swirl into caramel brown. Pour it over ice. Done.

The beans

Highland robusta, roasted dark

Cà Phê Sữa Đá is built around the slow phin drip: thick robusta over ice, condensed milk stirred in at the last second, and egg coffee whipped to order upstairs.

Our beans come down from highland farms around Buon Ma Thuot, roasted dark and ground coarse so the phin can take its time. Wait for the drip. It is worth it.

How it works

Order at the counter, take a stool, give the phin its four minutes. Egg coffee is whipped upstairs all day.
