Anne'nin Sofrası is home-style Anatolian cooking: village women roll gözleme by hand at the sac, and the slow stews grandmothers have made for generations murmur on the stove all day.

The konak keeps a mother's rules. The dough is rolled every morning, the pot is never hurried, and nobody leaves the table hungry.

The handmade craft

Rolled thin, by hand

Watch the dough as you scroll: kneaded, rolled paper-thin with the oklava, folded over the filling. The same three moves, every morning.

  1. Knead

    Flour, water, salt - rested under a cloth.

  2. Roll

    The oklava rolls it thin enough to read through.

  3. Fold & cook

    Folded over cheese or spinach, blistered on the sac.

Come to the table

We set the Sunday table long. For more than six chairs, please call ahead.

Sunday table

Every Sunday from noon we set one long table: gözleme off the sac, stew from the pot, ayran for everyone. Children under six eat free.
